I set my alarm for well before dawn on day two, dragged my kayak down to a launch near the resort, and shoved off just as the first pink edges appeared in the sky. Paddling quietly across the calm bay, I watched dolphins swirl, pelicans glide, and schools of minnows flicker beneath me.
After returning to camp, I whipped up a quick breakfast: scrambled eggs with bell pepper and onion, tucked into warm tortillas, plus fresh fruit. I grilled coffee in a percolator, watching the day wake up.
Later, I drove a short distance to Rockport for a stroll on the waterfront, popped into a local art gallery, and then lunched on gulf shrimp tacos at a little family-run restaurant. Back in the evening, I sat on the pier, cast a line, and caught my first speckled trout (well, small, but I was proud). There’s a quiet magic in mornings by the water here.
